青椒、紅椒及茄子洗淨後, 切塊

> 鯪魚內放入蔥(切粒), 加入麻油及糊椒粉, 攪勻 > 將鯪魚肉塗抹在已切塊之青椒、紅椒及茄子上 > 落油於鑊上, 待油滾後轉中火, 將青椒、紅椒及茄子放下, 鯪魚肉那邊放底慢煎至鯪魚肉至金黃色後, 取起放碟備用 > 茄醬(2湯匙)、醋(1湯匙)、糖(少許)、鹽(少許)及生粉(少許)加水攪均, 放於鑊中煮滾後, 加入青椒、紅椒及茄子炓一炓即上碟 > Enjoy!
